Tip:
First, back away.
Second, cast haste on the party.
Third, do cheer 6 times, that's important. You can also do other buffing specials 6 times (i.e. Focus)
If you got a spell or Wakka in the party use it. Once he closes in attack him, and I recomend curing his poison and petrification attacks with Al Bhed potions. The rest is up to you.

How to beat Evrae
When you are up to evrae attack him with magic and normal attacks and he will be dead in no time!!!

or you can just use rikku's overdrive and mix underdog's secret and a lv3 key sphere to create trio off 9999 and do blitz ace with tidus and win lol haha.
but thats what i did but i let everyone just go into the fight and defend then use blitz ace and win i 1 move.
