Then save before you breed them in case you're having troubles.
Having higherly classes Chocobos in racing will give you easier chances to get the Chocobo you need. So race them up to like B class at the least if you like (every 3 wins with a the same Chocobo, you advance one class). Of course this would be at the Gold Saucer Choocobo Racing Arena. Blue Chocobos can cross rivers, Green Chocobos can cross mountains, Black Chocobos can cross both rivers and mountains (plus straight down ridges), and Gold Chocobos can go just about everywhere. You can even feed each of your chocobos like 50 greens if you like. Syklis Greens are the best, you can buy them from Chocobo Sage.
Also if you normally choose the female chocobo first when breeding, try chosing the male first and vise versa. It usually helps.

Average: "This is a pretty average Chocobo."
Mediocre: "This Chocobo's so-so."
Poor: "This one doesn't seem to be very good."
Weak: "I really can't recommend this one."
